The GACC-CO has hosted white asparagus dinners in the past and we are very happy to have found a restaurant that will import the German delicacy to Denver just for us, for the first time in over five years. Tom Coohill, the Chef and owner of Coohills is preparing a four-course dinner for this intimate setting with every course featuring the star vegetable of the evening.
First course: Spargelsuppe – white asparagus soup with crème fraiche and served with homemade epi bread
Second course: Spargelsalat – chilled white asparagus with roasted tomatoes, Dusseldorf mustard sauce, and chives
Third course: Schnitzel mit weißem Spargel – German style pork Schnitzel with white asparagus and parsley potatoes
Fourth course: Spargel Pannacotta – white asparagus panna cotta with ginger macerated berries
A welcome drink and gratuity are included.
